Quail and Rice

12 quail
4 large onions
1 stalk celery
2 cans chopped mushrooms
2 cups uncooked
Salt and pepper to taste
2 cups chicken stock
Split quail. Cut onions, mushrooms and celery and cook in butter until tender. Put in a large baking pan or dutch oven and add the quail, chicken broth rice and salt and pepper; stir. Place in 350 degrees F. oven and cook until tender.
Add more liquid as needed.
